Patatas a lo Pobre

Ingredients
- 2 Tbsp (30 ml) olive oil
- 4 potatoes, peeled and sliced
- 2 green peppers, sliced
- 1 red pepper, sliced
- 1 bay leaf
- 8 cloves garlic, crushed
- Salt, to taste
Directions
- In a heavy saucepan over medium heat, heat olive oil.
- Add potatoes, peppers, and bay leaf and sauté.
- As the potatoes begin to soften, add the garlic.
- Salt to taste and continue to sauté until potatoes are soft all the way through but not disintegrating.
- Serve hot.
