Ingredients

  • 4 potatoes, peeled and sliced
  • 2 green peppers, sliced
  • 1 red pepper, sliced
  • 8 cloves garlic, crushed
  • 1 bay leaf
  • 2 Tbsp (30 ml) olive oil
  • salt

Directions

  1. Heat olive oil in a heavy saucepan.
  2. Add potatoes, peppers, and bay leaf and sauté.
  3. As the potatoes begin to soften, add the garlic.
  4. Salt to taste and continue to sauté until potatoes are soft all the way through but not disintegrating.
  5. Serve hot.
