Mantecados (Shortbread)

A mantecado is a Spanish shortbread from the southern province of Andalusia. This typical Spanish treat gets its name from the manteca, or lard. The distinctive flavor of mantecados lies in toasting the flour and using toasted almonds for a truly nutty taste. Recipe Servings: Serves 4

Ingredients

  • 1 1/2 cups (360 ml) flour
  • 1/2 cup (120 ml) ground toasted almonds
  • 3/4 cup (180 ml) lard
  • 1 cup (240 ml) sugar
  • 1 tsp (5 ml) cinnamon

Directions

  1. Toast the flour in a skillet to a light gold.
  2. Add the almonds. Mix well in the pan, then spread out on a large tray to cool.
  3. Preheat an oven to 325?F (160?C). Grease a large baking sheet.
  4. Cream the lard with sugar until light and fluffy.
  5. Fold in the flour. Mix it into a soft, fine dough.
  6. Roll out the dough on a floured surface until it is 1-inch (2.5-cm) thick.
  7. Cut out rounds. Place them on the baking sheet.
  8. Bake for 25–30 minutes to a light gold.
