Mantecados (Shortbread Sugar Cookies)
A mantecado is a Spanish shortbread sugar cookie from the southern province of Andalusia. This typical Spanish treat gets its name from the manteca, or lard rendered from pork fat. The distinctive flavor of mantecados lies in toasting the flour and using toasted almonds to achieve a truly nutty taste.

Ingredients
- 1½ cups (360 ml) flour
- ½ cup (120 ml) ground toasted almonds
- ¾ cup (180 ml) lard
- 1 cup (240 ml) sugar
- 1 tsp (5 ml) ground cinnamon
Directions
- In a skillet set over medium heat, toast the flour to a light gold.
- Add the almonds and mix well in the pan for a couple minutes.
- Spread mixture out on a large tray to cool.
- Preheat an oven to 325°F (160°C).
- Grease a large baking sheet.
- Cream the lard with sugar and cinnamon until light and fluffy.
- Fold in the flour and mix it into a soft, fine dough.
- Roll out the dough on a floured surface until it is 1-inch (2.5-cm) thick.
- Cut out rounds and place them on the baking sheet.
- Bake for 25–30 minutes to a light gold.
