Turrón de Navidad

Turrón de navidad is a toothsome almond nougat made from only three ingredients—toasted almonds, egg whites, and honey. This Spanish Christmas treat was introduced by the Moors, who ruled Spain from 711–1492 CE. Wildflower honey from a small town called Jijona was the catalyst for turrón’s original creation.

Ingredients

    1½ cups (360 ml) honey
    • 3 egg whites
    • 2 cups (480 ml) almond slivers, roasted

    Directions

    1. Line a dish with parchment paper and set aside a second sheet of the paper.  
    2. In a medium saucepan over medium-low heat, bring the honey to a gentle boil, then immediately remove from heat.
    3. Whip the egg whites to glossy stiff peaks.
    4. Gently fold them into the honey.
    5. Stir the meringue over medium heat for 15–20 minutes, or until it is thick and a deep caramel color.
    6. Add the almonds, stirring well and quickly before mixture hardens.
    7. Pour the mixture into the lined dish.
    8. Cover with the second sheet.
    9. Refrigerate for 3 hours.
    10. Slice when hardened.
